Caramelized Lime Caipirinha
These cocktails are prefect for your next staycation to get you feeling like only your own private beach awaits.
This cocktail is inspired by one we had many times at our favorite restaurant here in Boston, Toro. Sadly they no longer make it because, as you’ll see, it can be a little involved. Don’t let that scare you. If you don’t have the time to caramelize some limes, you can enjoy a regular caipirinha using this same recipe.
A caipirinha is typically compared to a mojito, just take out the mint and club soda, and sub in Cachaça for Rum. Cachaça is made from fresh sugarcane juice that is fermented and distilled, while rum is typically made from molasses. The taste is somewhere between rum and tequila, though more like a rum.
Tips and Trixx:
Caramelizing the limes takes time, and on low heat.
Follow this same recipe (without carmelizing the limes) for a refreshing regular caipirinha.
Ingredients:
3 oz Cachaça
1 tablespoon sugar/Demerara
2 fresh limes
Directions:
Slice limes in half, sprinkle flesh side with sugar, and place (sugared side down) into a pan on low heat for about 8 minutes (checking frequently) until golden.
Add 3 caramelized lime halves and sugar to a shaker, and gently muddle to release the lime juices.
Add Cachaça and ice to the shaker and shake for 20 seconds.
Strain into a rocks glass with fresh ice.
Garnish with remaining caramelized lime half.
